I followed a recipe from the Sukrin website for this one so I will link it below. I didn’t use their alternative sugar, I used dark brown sugar, just because thats what I had in the cupboard. These are what mine turned out like. I used Pic’s Peanut Butter for my icing. I mixed it with the left over butter cream from my Coconut cupcakes.
I got this mini heart shaped cake tin in B&M retail for only 50p. I bloody love it in there! As you can see I am terrible at making cookies, I never know when they’re done. The bowl is cull of broken peanut cookie. I substituted the extra nuts for vegan chocolate buttons so the broken cookie turned into a delicious pudding bowl. This was my first time using peanut flour, I think this is easier to use as apposed to coconut flour as you use the same amount you would if you were using normal flour, however with the coconut you use about 1/4 of what you normally would, so it’s a little strange to get your head around. Overall I would say that the coconut cupcakes were my favourite, but thats just because I love cake more than cookies. I recommend giving these ago even it is just out of curiosity.
